Bushmills’ twenty-one-year-old matures in bourbon and oloroso sherry casks and spends its final years in Madeira wine casks. It is a mature, smooth malt, with dried fruit, honey, spice, chocolate and a touch of walnuts, very well integrated. No smoke. It is one of the best-known aged Irish whiskeys, to drink neat and slowly.
